I'm having my son's Baptism and how much of the following do you think I should have?

Meatballs (about 2 inches each)
Roastbeef
Baked Ziti
Ceasar salad
Potato salad
veggi tray
peperonni & cheese tray

I'm not exactly sure how much get, my thought was to get:

25 lbs meatballs
12 lbs roastbeef
10 lbs ziti
15 lbs potato salad
10-12 lbs ceasar salad

please help, I was reading your site for 100 people, but it seems like soo much per meat that I'm not sure if I'll have way too much. Since I'm providing options, do I ned to truly follow the lbs you provide?

Thanks for your help, this is a great site - so much information!!!

Sorry forgot to mention I am having chicken fingers for the kids. Do you think 8 lbs will be good?

Thanks for your help!!

Hi, Allison, this is what I would do for this menu assuming most of the kids are relatively young (Preschool, elementary), I would count this as 125 people.

As discussed at the top of the meat section of the planning table, when you have 2 meats and one is roast beef, everybody takes more, and many take some of each. That is the basis for planning combined entrees.

Meatballs (about 2 inches each)- about 150
Roast beef- 40 pounds raw- no kidding, everyone will take some, and the shrinkage is nearly 1/3 when you cook it
Chicken fingers- many adults will take some- allow 15-18 pounds

Baked ziti-12 pounds dry (12 9x13 dishes). At least some should be meat-free to provide an entree for the non-meat-eaters in the crowd.

Caesar salad- 12 pounds OK
Potato salad- at least 25 pounds and you may run out

veggie tray- I would probably switch to fruit trays, more kid-friendly, prettier, and nicer with this meal- see fruit tray page
pepperoni & cheese tray- about 12 pounds of each

Ellen - your a life saver!! I totally forgot about the roastbeef shrinkage and the fact the adults to like chicken fingers as well. I'll switch to a fruit tray too!!!

Thank you for the information and guidance, the worst thing would be to run out of food - yikes!!!
