Using your suggestions for not layering more than 4 inches, I layered Chicken Enchilada Casserole in my roaster and froze it. When I bake it should I bake it from frozen state or try to thaw overnight in my refrigerator. Also, about how long do you think the baking time will be at 250. I am wanting to serve it hot for a wedding reception. I made the equivalent of four 9x13's. Thank you. Any help would be greatly appreciated.

Best if thawed in the refrigerator, and I would get it into the fridge 48 hours before baking. Preheat the roaster at least 20 minutes before inserting the baking pan. Plan on at least 1 hour. Check the temp in the middle with an instant read thermometer, you want at least 165, then turn the roaster to 180 to hold.
