40 people!

09/29/11 		I just graduated culinary school and am doing a 40 person wedding. Of everything I learned at school, I never learned the formulas for how much of each item I will need. They want shrimp cocktail, veg platter, cheese plater, horsed' oeuvs, prime rib, chicken dish, and sides. It is a buffet, How much of each? I need some help...Thank you so much!
