serving size

I am cooking for 100-125 people. These receipe's are so helpful. Question: what is the serving size suppose to be for let's say a casserole or stew.

3/4 to 1 cup, or so, depends on what is in it- few veggies, very meaty, less, more veggies and gravy, more.
