I'm preparing au gratin potatoes for 130. I'm using 6.5 lb cans of potatoes that I will slice. The can serves 18. If I use 8 cans in 4 catering aluminum pans (aprox. 10x18) will I have plenty for a generous serving for 130? Also can I make the white sauce/cheese sauce a day ahead? Thanks |

No, Gail, people love good potatoes and I never count on more than 24 people to a pan. I would do at least 5, and maybe 6 if they are heavy eaters or the rest of the menu is light. Yes, you can make the sauce ahead. |
