Ellen,I love your web site! Thank you for the information! I am planning a party for 70 and will serve only heavy hors d'oeuvres at 7pm. How many choices should I offer? Want to include grilled pork and beef tenderloin, how much of that should I plan to serve? Will also include a chicken meatball, some type of vegetable tray, fruit and cheese and possibly a couple of dips. Mostly concerned about the amount of tenderloins to offer. Thanks!

Have delicious tasty small rolls and mustard and mayo right there, so people make little sandwiches, or you will go broke. Have someone stand and slice and serve the tenderloin. Cook 1 pound for each 4 people if served- you will need 1 pound per 3 if self serve or no bread.
1 pound boneless raw pork per 3-4.
Definitely do the dips, and I would add one bready type one (2 pieces per person).
