dinner for 100 that can be frozen

I need to prepare a dinner for a local shelter. They need it to be one that can be frozen and later reheated. They advised I should freeze the meal in 4 large aluminum trays.

I will have a variety of different aged children helping in preparing the dinner - which complicates my options further.

I thought of lasagna & garlic bread, but i'm sure it is the one most people make and it would be nice to make something different that the residents don't eat often. I would also like to make a desert.

Any suggestions and advice you have would be greatly appreciated.

Any of the OAMC casseroles would work, and how about pineapple upside down cakes for the dessert, having the kids arrange all the fruits and cherries.
