food for wedding reception for 200 people

serving aprox 200 people for a wedding reception starting at 6pm. We are doing pulled pork sand,lil smokies, and make your own potato roll sand with ham, turkey and salami. For the sides we are having cold pasta salad, cheesy corn pasta, nacho's and cheese & veggie trays. can you help figure out how much of each i will need?

I would do 4 ounces of pork, 2 ounces of sausages, per person. 1 pound ham per 8, 1 pound salami per 8 1 pound turkey per 5, 3 ounces sliced cheeses per person. 2 rolls ( ounces bread) per person. 6 pounds crackers per 100. See the sandwich page for sandwich condiments.

Use different shape pastas for the two dishes, or switch one to potatoes. Hot, 8 pounds pasta or 35 pounds potatoes per 100. Cold dish, 6 pounds pasta or 35 pounds potatoes.

Add fruit trays, and put the sausages, fruit trays, and part of the cheese out in 2 appetizer areas.

For the nachos, use the taco bar for 100 toppings and supply 15 pounds of chips instead of taco shells.

Veggies, use the veggie tray page. Consider doing 2 classic relish trays and plain veggies for 80-100.

I would like to fix scalloped potatoes for 200 but using frozen hash browns. Can you simplify the recipe for me. I'm doing it at a hall so would like to make it simple. Thank you. Roxie
