Buffet for 24

11/16/11 		When providing hot open faced sandwiches for
24 I plan to cook a 10 lb. turkey boneless turkey breast and a roast beef. How many lbs. should the roast beef be? Is that enough turkey?

11/16/11 		Although the turkey breast alone is almost enough for the crowd, if beef is available, many will prefer it. Allowing for shrinkage, seconds, and some leftovers, I would do about 7 pounds raw, and serve presliced (thinly).
