What all (and how much of each) do I need to make sweet potato souffle for 150 people? |

Sweet potato casseroles, you use about 30 pounds drained ready to mash for each 100, so you need about 45 pounds. How much of a souffle effect? They don't truly souffle, but the amount of eggs, with the white beaten separately and folded in, gives the lightening or lift. |
