This is a very popular meat. Is it self serve or plated? You need about 1/4 cup sauce per plate. |

I would like to serve this for christmas dinner for my large extended family. they will contribute to the cost, I'd like to make the sauce ahead, along with twice baked potatoes, i will be serving buffet style. Am not sure of the quantities of meat and measurements for a large quantity of bordelaise sauce. thanks |

For 50 people, the optimum for this meat is 25 pounds. A true bordelaise takes beef demiglace and a reduced wine, 2 tablespoons of demiglace per person and 1/4 cup red wine reduced to 1 tablespoon. Is this the sauce you have in mind? |
