cooking christmas dinner for a K-12 school

Hi there, our Parent Advisory Committee sponsors a Christmas dinner for a smaller K-12 school(students &staff,about 325) Our meal consists of-turkey,ham,mashed potatoes,
coleslaw,corn, and gravy. Can you guide us in the right direction as far as quantities are concerned? We used to have a local caterer helping us, but are now on our own to figure things out-please help!!

The 8-12 graders count as adults for eating, the others are 2= 1 adult. There is a comprehensive planning guide for this meal in the holiday cooking section at the top of Big Pots; also cooking guides. You need a commercial kitchen and walk-in cooler, and you need to start cooking the day before.
