how many sausage/peppers/onion and chips for 100 p

Hi Ellen, this website is helpful, thanks. I am cooking lunch on Tues for 100 people at a "soup kitchen." The staff would like my group to make enough so that 100 people can have seconds. How many pounds of sausage, and how many onions/peppers should I buy? And hoagie bread...and chips?

For generous fat sandwiches with sausage and peppers, 200 sausages:

40 pounds sausage
40 pounds mixed onions and peppers- about 1/3 onion, 2/3 peppers, and nice if you can get some red, orange and yellow ones there-
200 6"rolls
6-8 quarts red sauce

8 pounds chips for 1 serving per person, double that for 2.
