do i cover my prime rib roast while cooking? I have a roast that weighs about 18 lbs, will this serve 17 ppl. how long for medium? |

Rosie, don't cover. 18 pounds is fine for 17 people. Read the prime rib thread and the beef roasting article for more help. |
