do you have any ideas on how to keep a vegetable tray, fruit bowl and a tray of finger sandwiches cold at a park. I am having a shower for my daughter at a park and it is supposed to be 90 degrees outside. what would be the easiest solution to keep this food safe to eat? thanks |

I know I have used the plastic lid the tray comes with, fill that with ice and put the tray on top....if not, you might want to try a small kiddie pool to put ice in to keep all your cold food on. hope this helps! |

Food can be left out 1 hour at this temp. You can keep the items in iced coolers in baggies and fill the tray s as they empty. |

Would it be "food safe" to put made up potatoe salad into foil pans (lasagna size) then covered tightly with saran then immediately refrigerated up to 2-3 hours before serving. Thank you for your help on the amt of potaoes needed for salad for 40 people .If I had read farther on your site (which is a good one)I could have figured it out DUH... |

Well, Kay, thanks for noticing! The potato salad should be at room temp only 2 hours TOTAL including the service time, so you want to fill those pans no more than 2-3 inches deep so they chill fast, and move/hold them to the service area in chilled coolers/ on ice. It sounds like you figured out that I try to make the site answer the questions so I can just say-RTM. |

I put my bowls in larger aliminum bowls and add ice around, it is surprising how long it last. |
