I need to know how much brisket, chicken, and sausage to purchase to feed 75 people and if it matters if I purchase chicken breast versus leg quarters. I am also serving baked beans, potatoe salad, & corn on the cob. |

Since this is an older crowd, I would plan 30 pounds raw brisket (it shrinks by almost 1/2), 12-15 pounds of sausage, and about 60 pieces of chicken (a quarter counts as 2 pieces, a whole chicken as 8). I would do whole chickens so there was a mix of white and dark meat. |
