We are doing Hawaiian Haystacks for a banquet for approx. 150 people. About 1/2 children and 1/2 adults. However, we are not very good with large group cooking quantities. Here is what we've come up with, based on our own calculations and what we've found on your website. Please let me know if you think we are way off - thanks in advance! It will be self-serve so we are trying to estimate slightly high. * 20 lbs. uncooked rice * 50 lbs. chicken - we will adjust our gravy recipe based on how much chicken we use * 15-20 cups of each topping (15 c. of less popular toppings like almonds, 20 c. of more popular toppings like cheese) |

16 pounds rice are plenty. Chicken is good. You can use the taco bar toppings list from the taco/potato bar for additional help on the toppings- you need more cheese- |

A few more questions on rice... How many cups of rice are in each lb.? I tried searching online and find answers anywhere from 2 c. per lb. to 3 c. per lb. Also I've been told (and read) that we can cook rice in the large electric roasters (like the kind used for cooking turkeys). For 16 lbs. of rice, could we cook 8 lbs. of rice in each of 2 roasters? And I assume you cook it the same way (2 c. of water for every 1 c. of rice)? Any tricks to cooking rice in roasters? Thank you so much for your awesome website and your prompt responses! |

Yes to 2 roasters. Read the baked rice recipe on the recipe box section for help with that. Yes, the amount of rice it makes depends on what kind of rice it is- long grain makes more than short grain, for example. |
