Could you tell me how much salami and cream cheese is needed to make salami rollups to feed 50 people? I also need to know how many pepperoni and how much cheese is needed to make a pepperoni and cheese tray for 50 people? |

salami rollups and pepperoni & cheese for 100 people, I use 12-20 pounds of cheese, depending on the other dishes, so half that. The pepperoni is funny; thin round slices to eat on bread or crackers, you use more than cubes on toothpicks, allow 1 1/2 - 2 ounces per person. Salami rollups, cutting 2 pieces from each slice of salami, allow one slice per person, making a whole slice into one roll, allow 1.3-1.4 slices per person. About 1 ounce of cream cheese per slice. |

salami rollups and pepperoni & cheese You want some color and texture. Tiny grape tomatoes, whole black olives and stuffed green olives, whole tiny pepperoncini. Radishes or carrots trimmed into patterns or curls. Use green or purple kale or romaine, garnished with fresh basil leaves, as a liner green. Put a small pbowl of mustard or horse radish at the center of the tray. |
