I was checking out big pots/and could not find recipe for broccoli salad for 250 people/the one with crisp bacon,red onions,etc. Could you give me the recipe for at least 100 and can go from there? Thank You |

For 100, as "not the only salad":
15 pounds broccoli florets blanched OR may use part broccoli slaw) (thats about 25 pounds raw)
3 quarts to 1 gallon mayo Blanch the florets: boil salted water, cook just 1 minute; turns bright green. Plunge into ice water to stop the cooking. Whisk up the dressing. Put all the stuff except the nuts on the broccoli, pour on the dressing and toss. Shortly before serving, sprinkle on the nuts and toos |
