I want to thank you for all the help that you give to us. This is a really wonderful thing you do. You helped me two years ago and it was wonderful. Thank you again.
A number of us do the food for each other kids weddings. We have done this before and know how much work it is and how many helpers we need. Please check my amounts. The reception is May 5th and will start about 5:30.

We wanted to try something different with the appetizers and serve salad with them from 530 to 6:30. The salad would be set up like a salad bar with a Caesar Salad, Italian Salad and a Make your Own Salad with a Spring Mix, tomatoes, cucumbers and shredded carrots with 2 dressings. On the same table would be 3 to 4 meat appetizers (meatballs, chicken ..) and rolls.
And then the main meal would be served at 6;30.

Here is the food estimations:
Appetizer Table
Salad -30 lb
Meat Appetizers - 1000 to 1200 pieces
Rolls - 300
Buffet Table
Corn - 11 cans (106oz)
Green Beans W/Bacon - 11 cans (101 oz)
Parsley Buttered Potatoes - 14 cans (105oz)
Rolls - 200
Baked Sliced Ham - 45 lbs (boneless)
Chicken w/ Modiga Sauce - 5oz. pieces - 200
Pasta con Broccoli - 10 lb of pasta
Baked Ziti w/Meat - 10 lb of pasta
(Brides wants chicken/Grooms wants Pasta.)

I am also thinking of deleting the ham and increasing the chicken to 300 5oz. servings. the two pastas is dry pasts before it is baked. Thank you again.

It is pretty close. Here are a few things I might do differently:

Have punches on the appetizer tables. Add fruit trays to the appetizer tables. Color-wise, this selection is a little bland.

You need at least guests plus 20% pieces of the entree if it is self serve. People will take a second piece or go back. I would do 50 pounds of ham at least, and 250 chicken. If you do chicken only, 350-360.

Serving both the pasta and potatoes makes the estimate a little tricky, I would probably increase to 12 pounds each.

You need at least 1.2 rolls each, and 3 pounds of butter per 100.
