hi. i am working on a farm and we are growing a lot of soy. i would like to make soy milk, tofu, and other soy products at home, and I was wondering if it is possible to do so using the fresh soybeans as opposed to dried beans... |

definitely, just start with the fresh washed beans instead of soaked dried ones, don't eat them or their milk uncooked, they are full of rather bad enzymes that interfere wityh YOUR protein metabolism until they are cooked. |

Hi, I am not making my own soy milk however want to know if I can make soy cream and soy yogurt using bought organic soy milk. Any help would be greatly appreciated. Thanks. |

It is possible but not guaranteed. The various commercial soy milks have different amounts of stabilzers and additives- the ones from the refrigerator in oriantal groceries have the least and keep the shortest time. You will have to experiment with what you have available locally. |

Yep, this is a favorite of mine, too. Definitely worth finding. Also good, cookbooks from The Farm, a soy based cuisine, and the uncheese cookbook. |
