Elen, I am planning a menu for my daughter's wedding. We are keeping it simple. We are using a local grocer who offers catering menus for large events. I am buying Oven grilled or fried chicken, I am planning on 324 pieces mixed, total for that is $226. Large trays of Garden salad will serve 24-38 people, at $32 each, I am planning to buy 6 trays. Either going to do a green bean almondine or mixed grilled veggies from them also, but still deciding. Without the veggie added in, I am at around $420.00 for the chicken and salad. We are going to be making the remainder of the dishes. Pasta salad, potato salad, and rigatoni with meat sauce. I have read your site, and I am thinking that buffet style serving, I will need at least 40 lbs of potatoes, but for the two pasta dishes I am a little unclear. what type of pasta would you consider rigatoni? and does the inclusion of meat sauce reduce the amount of pasta needed for the dish. I am figuring around 30 lbs of pasta (either farfaille or mini shells for the pasta salad). |

First, consider putting together your own salad, that is a high price for salad. Then you could offer both the green beans and the roasted veggies, which would be very nice.

Ellen, We are within a month of the wedding day. June 30th. We have a RSVP count of 122 people, I am planning on food amounts for 130-140 so that we will be covered. I am getting the chicken for $69.99 for 100 pieces. I am planning on 200 pieces of chicken or a little more if you think it wise. I am seriously considering your idea to make my own salad. question is, for 140-150 people how many trays would you suggest and what are the dimensions of the pans you would use? I am thinking of the foil serving trays |

How much lettuce would you suggest. i like Romain and iceberg lettuce mixed. My thinking is that the iceberg lettuce is less expensive and will provide a lot of fill. the romaine more for color and flavor, with a possibility of some more exotic greens if the price is reasonable. Your Thoughts? |

as for the other salad items, I am thinking grape tomatoes, cucumber, sweet vidalia onion, and something a little different like those DeLallo artichoke hearts or something along that line. |

Also, what quantity of Salad dressing would be appropriate? Sam's Club, or GFS foods, have large jars of dressing for not too much money. |

Eek Dave, you need to list the entire menu. If that chicken is the only entree, you need at least 2 pieces per person plus 10%. See the salad outline at the top of the plan for 100 page. It has amount and dressing advice. To add a topping, such as olives or artichoke hearts, you need 8 pounds per 100 to make an ounce, which is about right. |
