If this is a side dish, 30 pounds dry pasta and sauce to cover. If a main dish, 38 pounds. One pound makes a 9x13 pan, and a large steam table holds four 9x13 pans. |

Thanks Ellen for the response. What about the cheese? And if we used the larger pans what would be the amount. |

1 quart plus 1 cup white sauce per pound, 1 pound shredded cheese per pound. If these are lighter eaters, such as all ladies, decrease 10%. Just figure the total amount you need, and divide by 3 to 4 to figure the large pans (shallower is a bit quicker to bake than deeper.) |
