Thank you so much for all the valuable information on your site! I'm planning a light reception for 125, and your "plan for 100" page has been very helpful. I found your recommendation that I serve 3 to 4 gallons of egg salad, but how many eggs do I need to make that much? The other items on the menu are Raw Vegetable platter, Hummus, Chips and Pretzels, Cookies, and Sliced Loaf Cakes.

150 eggs makes about 3 gallons, depending on how much/what you add in. It would require about 2 quarts of mayo/mustard. |
