My church is planning a corned beef & cabbge dinner for at leasts 100 people. My question is I never cooked with a corned beef brisket so I am not sure how much of everything I am going to need and if I am sure even how to cook a brisket. Someone said to use corned beef lunch meat but that could be to expensive

Jamie, corned beef brisket is also fairly expensive. And much tastier than the lunch meat.

Normally, I get 1 pound raw brisket for every 2 people, It shrinks terribly. For a church function, if you pre-slice and have someone serve the first round, you can do 2 raw pounds per 5. Yes, you will be cooking 40-50 pounds of raw meat. I recommend the oven roasting steaming method for this much.

You need to also cook plenty of potatoes and carrots with this meal. Rutabagas and turnips are traditional in Ireland, and you might consider adding a rutabaga dish (sweeter than turnips).
