I am going to grill six top blade steaks and was wondering how to cook them so they come out tender and juicy? |

These are cut two ways; one cuts parallel the the piece of gristle in this muscle, and one cuts through it, leaving a streak of gristle in the middle of each steak. Unfortunately, this is the more common one (it's easier for the meat cutter to cut). If you have the second, cut into kebobs or yakitori style, removing the gristle streak. So inspect. Marinate overnight. Use a hot fire and grill to just medium rare- less than 10 minutes total for most fires. |
