Bar salad - 50 people

Hi Ellen, first I want to thank you for such a resourceful site! - I checked your info on salad bar and I came up with this plan below...this is a dinner for 50 people, buffet style ( home made), I am thinking to have a salad bar and I calculated using your info the quantities below, could you please let me know your thoughts...(I will also have a cured meets and cheese bar with buns and probably a taco bar but still working on the amount for this...) Thanks much! ; )

SALAD BAR
Iceberg lettuce - 2lb
Romaine lettuce - 2lb
Baby spinach or mixed greens - 2lb
Radish - 1lb
Chopped or sliced cucumbers
Grape or cherry tomatoes or drained, diced slices - 3lb
Grated carrots – 1 lb
Peppers sweet – 1lb
Peppers – jalapeños – 1/2 lb
Red or green onions - 1lb
Chickpeas or kidney beans - 2lb
Bacon bits – 1/4 pound
Cottage cheese – 2 lb
Chopped or sliced hard boiled eggs – 24 eggs
Hot sauce
Dressing selection to include one each creamy, balsamic/vinegrette, and Asian-style dressing, one each low cal ranch and low cal or fat-free Italian

me again, sorry forgot to mention that that would be for the appetizers ...I am still working in the main dishes that also will be buffet probably pasta and some meat....and also I will have desserts but still working on all this...
