Hi Ellen. I am so glad that I found your site! I am cooking for a friends baby christening and am not sure about the quantity to make. She is requesting Baked Ziti, Chicken Francese, Rice and Sausage and Peppers. She is said to have about 75 people. I'm not quite sure how many trays or how much to fill each tray. Is there a formula? Thanks!! |

I do 5 ounces chicken (1 pound boneless per 3) and 1 pound sausage per 5 plus equal weight sausage and peppers for this combo. 5 pounds dry pasta. 4 pounds dry rice. |
