baked potatoes for 700 - 100 people

Our church has an annual fish fry. We serve from 700 to 1000 people each week. We bake about 500 potatoes each week and would like some suggestions on how this can be improved.

We currently double rack them in commercial ovens. We diip them in butter and shake cosher salt on them. Would it be OK to use olive oil in place of the butter?

Olive oil is good, and easier than butter.
