I need help on how much to quantity of ingredients I need to buy.

Menu-Buffet Style:100 guests

Chicken Parmesan-chicken breast cutlets
ingredients-marinara sauce (homemade)
mozzarella cheese/Parmesan cheese
fresh herbs-basil/oregano/italian parsley

romaine/iceberg lettuce
italian dressing
croutons

garlic bread

bruschetta-appetizer

Shelley, I would expand this menu a little, as it is a little light and you will have some guests who do not eat chicken.

Chicken Parmesan-chicken breast cutlets
ingredients-marinara sauce (homemade)
mozzarella cheese/Parmesan cheese
fresh herbs-basil/oregano/italian parsley- Do 1 pound raw boneless per 3 people

Add a plain baked pasta, about 12 pounds, meatless. See the baked spaghetti under basic budget entrees. You could use the Alfredo-style sauce for 100 on the spaghetti page if you preferred.

Consider adding either broccoli (25 popunds)or an eggplant casserole (8 9x13 dishes)
