Hi Ellen, I am making a fresh green salsa and a chimichurri sauce a day ahead of my party and wanted to know if they can be stored on the counter overnight. I've made them before and refrigerated. The next day they solidified a bit (oil in chimichurri I think) and kind of separated when thawed. I'm wondering if it is like a vinigrette, couldn't I store room temp?

No, the chilis are just teaming with little bacteria- either make day of or refrigerate.
