Pricing appetizers for a wedding reception for 125

Ellen, I am doing a wedding reception for 125 people. I have never set up apps for this large a crowd. My menu is:

Guacamole, salsa & fruit salsa with chips
Spinach Dip with veggies
Stuffed Mushrooms
Roasted Potato apps
Pork Tenderloin on Rolls
chicken Salad on Mini Croissants
Ham and Cheese on Rolls
Cheese Tray

How much of each salsa should I count on? What about Spinach Dip?

How many of each app should I prepare? One of each for each person or how do you decide?

Help! I did not really want to do it, but basically was insisted upon to do it.

Linda, if this is a paid gig, add $20 to the bill and send me a donation.

This is a cocktail reception- 2 hours, not at meal time (when everyone is starving). If at lunch or dinner time, amounts needed can double.

For 125 people, this is what I would do:

Guacamole- 1/3 cup per person
salsa-1/4 cup per person
fruit salsa- 1/4 cup per person
chips- 1 1/2 ounces per person
Spinach Dip 1/4 cup per person
veggies-per person, 2 ounces ready to eat
Stuffed Mushrooms-2 per person
Roasted Potato apps- small- 2 per person
Pork Tenderloin on Rolls- 2 ounces pork,2 small rolls
chicken Salad-3 ounces, 2 mini croissants on Mini Croissants
Ham and Cheese on Rolls- skip or do cocktail rye (the tiny slices)and add ham to cheese tray
Cheese Tray-20 pounds, some can be logs or balls; 1 1/2 ounces crackers per person

And remember, "NO" is not a four letter word.
