Tea Party for 72 people

03/23/12 		Hello Ellen,(I NEED YOUR HELP)!
I am throwing a Tea Party for 72 people. I will only have 3 different finger sandwiches (egg salad,chicken salad,& cuccumber & tarragon sandwiches)along with tea cakes,scones,cookies & bar desserts. For this menu what is the exact amount i need? I only have two people to help me prepare the sandwiches for the party that starts at 2pm. Can we make the sandwiches a day ahead or do you think we should make the sandwiches early on the day of the event?

03/25/12 		For mid afternoon, 1 whole sandwich (3-4 fingers) per person- I suggest, 1 cucumber, 1 egg, 2 chicken fingers per person.

If you make the day ahead:

No more than 24 hours

thin butter or mayo to the edge of every single piece of bread before filling and stacking.
Store whole; trim crust and cut fingers day of, not day before

Layer with wax paper, then a damp paper towel before wrapping in saran wrap, to avoid drying out.
1 large, or 2 small scones per person, 1-2 teacakes, 1 small of up to 4 cookies and bars
