I am planning a dinner for 40 adults. I plan to serve brisket and chicken parmesan. How many pieces of chicken and how much brisket should I cook? And also, can I prepare twice-baked potatoes the day before and reheat them for the dinner? |

Yes on the potatoes, this is an excellent dish for party food. About 18 pounds raw brisket total and 1 pound raw chicken per 4. |

Question about the chicken parmesan. Can I bread and partially cook the chicken breasts the day before the party and then assemble them with sauce and cheese the day of party and finish them in the oven? |

It is not safe to partially cook the chicken patties, you need to bring them to 160. Then you can sauce and bake just till hot day of. If you do it this way, consider bring the chick breast for a few hours before cooking. |
