Meal for 200

I am cooking for 200. Looking at serving brisket, pork loin, and sausage in a buffet style. How many pounds of raw meat each would you suggest?

This is what I would buy:

brisket, 90 pounds raw well trimmed
pork loin, 40 pounds raw boneless
sausage, 30 pounds

This seems like a lot, but the brisket shrinks 50% or more
