I am cooking for 200. Looking at serving brisket, pork loin, and sausage in a buffet style. How many pounds of raw meat each would you suggest? |

This is what I would buy:
brisket, 90 pounds raw well trimmed This seems like a lot, but the brisket shrinks 50% or more |
