Hi, Shell

70 lb of raw pork shoulder roast with bone. I planning on making it up in advance and reheating in an oven roaster. (3-4 hour of reheat time-- Will that be enough) Reheat is fine, but not enough meat. Even allowing just one bun per person, it makes no more than 4 per pound.

6-6lb bags of Frozen Meetballs(each is supposed to serve 32 people at 5 meatball each)(3-4 hour of reheat time-- Will that be enough OK

Potato Salad- 75lbs this is usually less than 3 gallons. I do 3 gallons per 100 for reception level food.
Asian Cole Slaw-251bs I do 2 gallons per 100 for reception level food
Baked Beans- 4- 48 oz of northern beans I do 2 gallons per 100 for reception level food
sliced dinner roll- 335 ct Bread is cheap get at least 360
Doritos- 8-each bag serves 16-allow 1 ounce per person, everyone eats them. 1/4 cup dip or salsa per person
Cookies- two types 300 of each
Cake- 1 full sheet cake this is only about 100 small pieces. Consider a 2 layer sheet cake
lemonade and tea - 5 gals of each need at least 6 gallons per 100 plus ice Some should be unsweetened/ sugar free
