Cocktail appetizers for 125 people

I am trying to plan appetizer for 125 people for my wedding cocktail hour. I want to serve the following:
Spinach artichoke dip
Veggie tray
Fruit tray
Cheese and cracker tray

How many of of each, or amount of each do you estimate I need? Are your amount on the appetizer table considering a mixture of items or if you are serving only that one item?

04/04/12 		This is what I would do:

Spinach artichoke dip 1/4 cup per person plus 1 ounce chips or bread
Veggie tray-see veggie tray page; about 2 ounces veggies and 3-4 tablespoons ranch dip per person
Fruit tray- 3 ounces ready to eat per person, see fruit tray page
Cheese and cracker tray- 2 ounces cheese per person, 1 ounce crackers

04/06/12 		Dinner will be served about an hour later. Are these amount taking this into consideration? Thank you so much!

04/12/12 		OK. You only want about 6 "bites" or small servings per person, so you can cut in half.
