Serving 2 Entree's- How much of each?

Hello. We are serving Beef tenderloin and Chicken Breasts Stuffed with Cornbread dressing for approximately 100 guests on a buffet line. Do we need to prepare 100 servings of each? or maybe 75 of each? Need fast response if possible please!!

5 ounce cooked ready to eat beef PLUS 3 ounces boneless or 6 ounces bone in chicken per person. You can get away with 4 ounces on tenderloin, if someone stands and carves it- if buffet, people, eat a lot. 2 pounds raw for 5 people.
