I'm serving 125 meals of a baked chicken breast stuffed with spinach and cheese, your augratin potatoes, steamed broccoli and carrots. Would a spinach salad be ok along with the spinach in the chicken. Also chicken recipe calls for frozen chopped spinach--how can I use fresh spinach in the chicken instead. Thanks |

I would probably do a Greek salad or some such, not spinach, with this menu. To use fresh spinach, you need to clean it and steam it, then chop and drain. Too much liquid released can be very bad for your recipe. |
