Jacque, the amounts for fruit trays are covered on the fruit tray page. You want to end up with 2-3 ounces fruits and 1/4 cup dip per person. |

Starla, First PLEASE read my article on wedding dinners. You need 3 people in the kitchen, about 12 servers to set up serve and clean up the party and it cannot be you or your mom. You need 1 pound fruit per 5, 1 pounds veggies per 8 and 1 pound cheese per 10, with 1 pound crackers per 12. Get the weight on the trays and you can figure it out. chicken breast and sliced ham; 1 pound raw chicken per 3 PLUS 1 pound sliced hame per 5-6.
All of these are covered in the plan for 100 list, use 2 times the amount for 100: |

I am having 60 people for dinner. My dessert will be strawberry shortcake. How many pounds of strawberries do I need? I figured 4 people per little square basket of strawberries. How much heavy cream do I need to buy for the whipped cream? Do you have a recipe for a large whipped cream amount? thanks. the party is this sunday June 3. |

I do 1 quart berries per 8. 1 cup cream to whip per 5-6. |

I was going to use 3T sugar per 1 1/2 cups of whipping cream, does that sound right? |

Yes. I don't like it very sweet. |
