Serving mini tacos at a wedding reception

Ellen,
My son wants to serve mini chicken tacos and chips and salsa at his wedding reception in June. What is the best way to safely serve the tacos (his fiance wants them to be preassembled). There will be about 200 people, how many mini tacos should I plan for if we will also have chips and salsa and cupcakes?

Preassembled just doesn't work with tacos, they soak through both crisp and soft shells. What time is the service? The reception? What else is being served? This seriously affects amounts. Write back.

Options; taco bars, burritos, etc

The reception (really an open house) will begin at 6:30 pm. The wedding is actually on a different day. The plan was to serve chips and salsa (4-5 different kinds of salsa), the tacos, and sunflower cupcakes and lemon water for drinks. It will be a backyard reception. Would it work to just do a taco bar instead of serving preassembled tacos? I will have helpers in the kitchen, could they assemble a few at a time and take them out to serve them.

Taco bar is excellent- you need 2 two sided lines- use the taco/potato bar page for amounts.
