Hi, I have been enlisted to help with a street fair for a couple of thousand people. However, my group is only preparing to cook beef and chicken kebobs for 500-600....How many pounds of beef/chicken breast should we purchase to skewer along with (3) choices of veggies (red onion, red peppers, green peppers for the beef and onion, zucchini, squash for the breast meat. The skewers will be 8 inches long..... |

It depends completely on how much you want to price them for; the food cost is usually 1/3 the selling price, so you have to figure your selling price, then figure back for the food cost, counting that most of that is meat cost. Usual is 5/8 beef 3/8 chicken. |
