amt to buy/strawberry spinach salad

05/28/12 		Hello, Ellen, Could use please help me with the amt. of ingrediets to buy. I will be serving 300 total, buit if you could break it down to 100 serv. I would be grateful. I will be using feta intead of the goat cheese.

Spinach and Strawberry Salad
Serves 4
This baby spinach salad is dressed in raspberry vinaigrette and tossed with fresh strawberries, almonds and creamy goat cheese.

Ingredients
1/2 shallot, finely chopped
2 tablespoons raspberry vinegar
2 tablespoons extra virgin olive oil
1/2 pound baby spinach
1 cup strawberries, thinly sliced
1/3 cup sliced almonds, toasted
2 ounces fresh goat cheese, crumbled

12 pounds spinach
5 quarts strawberries
3 quarts dressing (1/2 oil, 1/2 vinegar)
2 pounds sliced or slivered almonds
about 1 1/2 quarts cheese crumbles (about 2 pounds)
