Wedding reception

I am serving 220 people at reception. I will serve separate platters of whole strawberries, lunch meats, sliced cheeses, variety of crackers, cheesecake squares, cream puffs. There will also be the wedding cake. Reception will be for about 2 1/2 hrs. at 8:30 in evening. How much of each do I need to buy.

This is reception-level food. Approximate amounts:

1 quart strawberries per 10 (this depends somewhat on the size and whether there is a dip)

2-3 ounces meats per person

1 pound sliced cheese per 10, a bit more if you slice it yourself

1 pound crackers per 10, consider some good dollar size rolls for part of the breads

1 cream puff, 1/2 cheese cake pieces per 10

Interesting comment Ian.Since I live in Vancouver and work dotwnown where there aren't a ton of folks farming fish and shellfish I'd have to say I most commonly 'run into' aquaculturists on Twitter!Jeremy

I am making baked ziti for 175 guests. I need to know how much of each ingredient I will need to feed 175 guests.

Ricotta
Italian sausage
Mozzerlla cheese
Spag. sauce 30 oz jar
What size pans should I use?
Is it possible that I can cook the meat an sauce prior to use and freeze it?

There are a lot of recipes for baked ziti, here are amounts for a simple, meaty one for 180 with plenty of veggies:

30 pounds link or bulk Italian sausage, sliced or crumbled
6 1-pound packages mixed frozen pepper strips
5 large onions, chopped
4 1/2 gallons spaghetti sauce
6 large carrots, shredded into sauce
24 cups sliced fresh mushrooms
2 1/2 quarts tomato juice or red wine
1/4 to 1/2 cup Italian seasoning (depends on the sausage)
3 tbsp salt
2 tbsp pepper
18 pounds rotini (corkscrew) noodles, cooked and drained
7-10 pounds ricotta
12 pounds mozzarella cheese, shredded
Mixed with 1 pound grated parmesan cheese

12 6 quart or 21 9x13 pans

Yes, you can cook up the sauce ahead and freeze it.
