I need help with food amounts for 70 box lunches of turkey,apple & cucumber sandwiches. Apples & cucumbers are sliced thin. |

For a nice sandwich, 3 ounces sliced turkey. 1 pound apples or cukes will easily do 12 sandwiches, but I would probably put these in a finger salad baggy with some baby carrots and grape tomatoes- unless you are in California, apples and cukes on the sandwiches may be too far out for the guests.
