300 People Wedding Buffet

Hello- I'm looking for help with planning amounts for sides on a 300 person buffet. I have used your chart to calculate these but could you please let me know your thoughts? Thanks so much for the help!

Sides:
Tossed Salad- 39lbs lettuce, 2.5 gallons dressing, 10lbs shredded cheese (40 cups I think) and 80oz crumbled bacon

Pasta Salad- 80lbs (1/2 cup each)

Cheesy Potatoes- 80lbs (1/2 cup each)

Green Bean Casserole- not sure on pounds but I think it would take about 100 cans of green beans for this recipe
Rolls- 360

Butter- 500 individual butters

BBQ sauce for meat- 3 gallons

OK. The salad is a bit dull, I would opt for cherry or grape tomatoes instead of cheese, especially with the cheesy potatoes and the casserole green beans. Amount is OK, no leftovers.

Pasta Salad- 80lbs (1/2 cup each)- OK

Cheesy Potatoes- 80lbs (1/2 cup each)- I always make 120 servings for these potatoes for 100- very popular

Green Bean Casserole- not sure on pounds but I think it would take about 100 cans of green beans for this recipe- 5 #10 cans per 100

Rolls- 360 Depends on size, if small do two per person, you want 12-14 pounds per 100

Butter- 500 individual butters- about 8 pounds...

BBQ sauce for meat- 3 gallons- 1/4 cup per person= at least 4 1/2 gallons

150 People Wedding Buffet
I'm fixing green bean casserole for my son's wedding buffet reception for 150 people do you have a recipe I cna make ahead?

See Ellen's Better Green Bean Casserole, in the top section of the Big Pots index page. Tasty, holds beautifully and much more interesting than average. Make 2 1/2 times the recipe for 150 people.
