I am doing a buffet for 150people. Could you give me quantities for the following menu please.
I am assuming because there are three entrees the portion sizes can be smaller but it is self serve.
Chicken Marsala
Pene Pasta with Meatballs
Roasted Pork Loin
Tossed Salad
Roasted Vegetable Medley
Asparagus wrapped with Bacon

Chicken Marsala- 1 pound raw chicken per 4
Penne Pasta with Meatballs- 18 pounds pasta, sauce and meatballs as needed
Roasted Pork Loin- 1 pound raw per 3
Tossed Salad- see plan for 100
Roasted Vegetable Medley- 25 pounds per 100 ready to cook
Asparagus wrapped with Bacon- 1 pound ready to cook per 5 (that is about 1 1/2 pounds raw- a lot of loss on raw asparagus.
