Hi Ellen, This is a very helpful site, thank you for having it in your heart to help. I am scheduled to cook for roughly 80 servings. I would like to make Thai Red Curry but am wondering if it can be done without compromising the dish. We use 40 qt pots, aluminum, and use a gas stove. I am not using a rice cooker either.......yikes, do you think it can be done in this large quantity? Thank you for your time, Robin |

Bake the rice in the oven in two covered roasters- works fine for plain, see the baked rice recipe in the recipe box. You need 5 gallons of sauce, you can make this- I like a shallower pan- would probably make in 2 pots. Then do your meat and veggies, then mix and you can simmer again in the oven covered to avoid scorching. |
