can you keep chicken warm.i read on a sight that you can wrap bricks in foil heat in the oven and place in a cooler and it wll keep chicken warm for several hours

You will run out of mac and cheese.

With all the other meats, 12 pounds sausage is way plenty. Potato salad, start with 25 pounds of potatoes.

Food is considered "safe once it comes out of the oven for 4 hours. I do not suggest the brick method. And electric roaster at 180 is a MUCH better idea.

Hi Ellen, My daughter and her best friend decided they wanted to have their grad party together, so we are having a picnic style party in the park. Between the two families we have invited approximately 180 people including children but not including their (HIGH SCHOOL FRIENDS)! Our menu will consist of:
Meats: Hamburgers/Brats/Italian Sausage
Salads: Macaroni/Cole Slaw/Ambrosia
Sides: Baked Beans/Corn on the cob
Fruit: Mixed Fruit Bowl or Mixed Berries Bowl
My main concern is the quantity of meat i should purchase, but if you could calculate the other menu items i would appreciate it. Oh, one more thing how do you accommodate for your kids friends when you don't know how many will show. Thx

38 pounds raw boneless meat and sauce in proportion per your favorite recipe, plus 1 cup sauce per 5-6 instead of ketchup.

This is a little amorphous, so a tough estimate. I would do the taco bar for 150 (see taco bar page) and make the pulled pork part of the meats, do 20 pounds taco beef and 15 pounds taco chicken and about 25 pounds pork for pulling. I would switch the beans to borracho beans or ranch beans or black beans (something that would also go with the tacos)), about 5 gallons, and do Spanish rice instead of ziti (baked and MUCH easier than the ziti). Just add about 100 rolls to the rest.

Slaw would be very nice with this, about 4 gallons.

The soda water and beer are covered in pretty good detail on the beverage page. Take a look and if you need coaching just post again.

Hi, I am having a graduation party for about 80 people. We are having pulled pork, ziti (both regular and buffalo chicken), hot dogs, tossed salad, fruit salad and a vegetable tray. How much of each should I make for about 80 guests?

Unless you are deeply devoted to hot dogs, consider skipping them or switch to meatballs- healthier, and perfect with the ziti.

hot dogs, 1 per person, but don't open all the packs
OR 8 pounds meatballs, about 3 quarts sauce
pulled pork, about 20-24 pounds raw boneless pork
buns and sandwich condiments, see the sandwich event page

ziti (both regular and buffalo chicken), 8 pounds dry pasta, about 1 quart sauce per pound

tossed salad, 2/3 the amount for 100 on the paln for 100 page
suggest you add a gallon of slaw with the pulled pork
fruit salad, see the fruit tray page- but consider fruit trays- easier to prep, prettier, and the leftovers are more useful
vegetable tray, with the green slad, consider the classic relish tray for 60 on the veggie tray page, with 2 pounds each baby carrots and cherry tomatoes added.

Assuming that you are grilling, that this is buffet/ self serve, and that it is a party of mixed adults; when people have a choice of desirable entrees, they take more and often some of each; 2 pounds raw boneless beef per 7 plus 1 pound boneless chicken per 6 (if bone in, 1 piece per person, with the chicken cut into 10 pieces) plus 1 pound sausage per 6.

Graduation party for 100. Guessing 50 teens. Daughter getting corn bread and Nachos made for 100. She is getting 10 lbs cheese to make Mac and cheese and 10 lb macaroni. 2 gallons- I use 2-3 cups for a 5 pound, bone in roast.

dips- 1 cup per 8

Hi! We are having a graduation party for 150 people from 12-5pm. What are the proper quantities to prepare? Cheese tray, fruit platter, veggie tray. You definitely do not need a potato dish, based on the menu and on the oven space issues. The only thing you might add, based on the pork, is a couple of gallons of vinegar slaw. This is what I would do:

For desserts, see the dessert planning page. It takes about 23 pounds of fruitcake to serve 100 people cheesecake, and there is lots of help for dessert buffets.


Cheese tray, about 12 pounds, some can be spreads or logs
crackers or bread, 10-12 pounds

veggie tray, see veggie tray page. Consider doing 2 classic relish trays and fresh veggies for 50, would go well with this menu

You are basically looking at $1200-1800 for 180 guests, and you need more food.

Hot dogs, 2 per person
Meatballs, 10 pounds per 100
You need buns and condiments, see the sandwich page
Consider skipping the hot dogs and just doing meatballs, 1 pound per each 4

Potato salad- 4 1/2 gallons per 100
Need to add pasta salad, 10 pounds dry pasta
Need to add one additional starchy dish, such as baked beans or borracho beans; or fruit trays

Green salad- see plan for 100 table, do 1 1/2 times the amount for 100
Add slaw, 4 gallons

Possibly sandwiches - hoagies with ham cheese and turkey - pre made if cheaper
It would require 6 6 footers to feed all the guests without any other meat, one makes about 30 servings. A foot long can be cut into 4 pieces for party serving.

Hot wings if cheaper to buy bulk from Costco. Hot wings are never cheap these days.

Cupcakes. 1 per person if 1 flavor, 100 each if 2
1/2 sheet cake- is only 24 pieces

Candy bar - daughters request - no idea how much to buy for that
Basically, 1 pound for each 4 to 6 people, depending on type and size of candies.

I have ordered 150 pieces of chicken, 72 sandwiches, 1/2 sheet cake, 48 cupcakes and a case of brownies(24 ct). This is a very extensive menu with many last minute stove and oven dishes for 100 people. Are you using a commercial kitchen? Would you be willing to simplify? For example, mostaciolli or mac and cheese, not both? You will have fewer leftovers and it will be less work.

There will be 71 adults and 12 children. We are figuring everyone over 14 as a adult.

Also gonna do 11x13 trays, do you know app. how many trays i would need.

You want at least 20 pounds of frozen potatoes; this size pan holds almost exactly 1 gallon. I don't know what/ how much you will add? Suggest you take the frozen in the bag potatoes and lay them in the pan and see how much it will hold, then calculate from that, figuring the sauce will be about the same as the space in the bags.

If you use foil disposable pans, absolutely do NOT pick them up full- they will bend and collapse. Move them on cookie sheets.

planning a pig roast. 1 pound whole per person, 1 quart sauce per 15.
Have a crockpot of vegetarian sausages for any non pork eaters (label it). I like Field Roast brand.

baked ziti. 10 pounds dry pasta, 1 quart sauce per pound, 1/2 to 1 pound cheese per pound
Meatballs. 12 pounds, 1 gallon sauce

Baked beans. 5 #10 cans- 4 gallons
mac salad. 8 pounds dry pasta

Cheese tray. 8 pounds cheese, some can be logs or spreads, 6 pounds crackers

Veggie tray. Use veggie tray page, 6 bites per guest. would probably do tossed salad instead, see plan for 100. Consider adding a fruit tray, see fruit tray page.

Just going to throw this out there - has anyone done pizza for a graduation party before?? Planning for 75 max which includes 30 men, 29 women and 5 children. Want to keep expense down if possible. Not sure how many pizzas we would need. My son loves pizza and has oral sensory issues that limits his food likes. Also wants pickle wraps, which we did for my daughters. Any suggestions for other foods to go with and or alternative for the pizza? Party is on May 13th, 2017 in less than 7 weeks! Thanks for any help you can give! Glad I found your web site! Have a small wedding next year so intend to explore your site more!

Lori if you have a relable oven, you can cut costs by baking some of the pizzas yourself. Is this possible? Also, are there teens in your crowd? Write back.

If mostly adults, I would go with a big salad and a big fruit tray as the minimum sides. What is your kitchen situation at the venue?

Please read over the festive family brunch for 100 guide on this site. Suggest you add some of the strata and other dishes outlined and pay close attention to the storage and heating issues. I love electric roasters but you can only plug in one per 15 amp circuit, which means 1 per room in most homes.
Donuts are costly- consider bagels, muffins, etc for part of your carbs.
When you have reviewed, please write back your menu and definitely start a new thread so you are easy to find.

We are having a graduation open house from 11-2. My daughter wants her favorite shredded turkey recipe to make sandwiches, also cheesy potatoes. Do I need another side or can I get by with veggie and fruit trays then the dessert I have figured out. Also how far in advance can I make the turkey then heat up in roasters for party? Also how much Meat will I need? I'm thinking 150-180 people. I'll domthe potatoes in roasters too. How many can a typical garage handle?

We are having a graduation party for approx. 175 adults and 25 kids. Our menu consists of chicken riggies, meatballs and sauce, sweet and med. sausage in sauce, sloppy joe, meatless ziti, pulled pork, tomato pie, kielbasa and sauerkraut; pasta, Mac and pota salad, baked beans and melon salad. I'm thinking 10# chicken 4# pasta,15# sausage and 15# hamb/meatballs, 15# hamb for sloppy joe, 20# pork butt, 10-15# kielbasa. I was thinking 2# pasta per salad and 3# baked beans. 4# pasta for ziti. Are my calculations semi correct, or do you think we'll run ot of food?

Mary, you look like you will run out of some items and have too much of others. This is close to 200 people, since I don't know ages of kids. Usually for this size party, 3 entrees, or at most 4- with more, you end up with a lot of waste, or running out of some with too much of others.

This s a very starchy menu, suggest dome salad additions at the end.

Also, 1 pound pasta serves at most 8, and can be as few as 4. Here is what I would do for this menu:

chicken riggies, for each 8 servings, 2 1/2 pounds boneless chicken and 1 pound pasta, 1 quart compounded sauce, 1/2 cup olives, 1/2 pound fresh mushrooms1 bell pepper, hot peppers to taste
This is likely the most popular, I would do 16 pound pasta

meatballs and sauce,
sweet and med. sausage in sauce,
kielbasa and sauerkraut
These dishes are rather similar, any 2 would be plenty. 15 pounds meatballs, 4-5 quarts sauce. 25-30 pounds total all sausages, lesser if you do just 1, greater for 2. 1 quart sauerkraut perper 3 pounds kielbasa. Mustard.

These dishes are very similar, given this menu I would do pork only. 12 pounds ready to serve, which is about 16 bone in, and 60 regular or 120-140 slider buns. 6 pounds sliced onions, 3 quarts pickles, slaw as noted later.

meatless ziti, 6 pounds pasta, 6 quarts sauce, 3-6 pounds cheeses

tomato pie,
A 12x 18 pie cuts 18 pieces. If this is a popular dish, do at least 6-8 trays.

pasta salad,
Mac salad
With all the other pasta, I suggest do just 1- 6 pounds dry pasta total plus add-ins
potato salad, 20 pounds unpeekled or 35 pounds peeled potatoes plus add-ins

baked beans, for most menus I do 3 gallons per 100, with all this pasta, would do at most 4 gallons total and make at least some meatless.

Please consider adding 3-4 gallons of slaw and at least a green salad for 100, for salad help, see the plan for 100 table. Also, 12-16 pounds talian brad or baguettes and 2 quarts olive oil for dipping.

Grad party for approx 125 (15 teens, 10 kids under 10yo, the rest adults). Party 3-7pm on a Saturday. Menu:

Fried chicken= 150 pieces
Sausage and peppers= 20 lbs each
Rigatoni with red sauce = 10 lbs
Cheesy potatoes (grad request)=?
Rolls= 125
Vegetable tray
Fruit tray
Full sheet cake

Do these quantities look ok? Any suggestions appreciated

Since the teens and preteens balance each other out quantity-wise, I would count this as 125 diners.

Fried chicken= 150 pieces- OK
Sausage and peppers= 20 lbs each- OK
Rigatoni with red sauce = 10 lbs- OK, prob none left, some meatless
Cheesy potatoes (grad request)= do for about 50
Rolls= 125- Go for 12-14 pounds and consider getting rolls that will make sausage and pepper sandwiches, or maybe baguettes
Vegetable tray- Use veggie tray page, or consider a green salad
Fruit tray- deluxe tray for 100 on this site or equivalent amount good
Full sheet cake- serves only 60, consider a 2 layer or add 4-5 dozen cup cakes
