Hi Ellen! I am catering a teen boy's graduation party for 75-85 guests. The family is very specific about no onion, and nothing spicy. They have requested Pulled Chicken, Cole Slaw, Sesame chicken, Fried Rice,Veggie Sloppy Joes, Veggie Penne, Pasta Salad, Fruit Salad, and an assortment of desserts. I have referenced your Plan for 100, but want to be sure I have the amounts right. 30lbs b/s chicken breasts for the Sesame Chicken, 30lbs of thigh meat for the pulled chicken, 10 dozen rolls, 1 gallon cole slaw, 5 lbs (dry) rice, 5 lbs (dry) penne, 5 lbs (dry) pasta for pasta salad, approx. 28 dozen assorted cookies/brownies. I have the fruit figured out, and the veggie sloppy joes are a small pan request. Thank you in advance for you help! |
